250g fresh udon noodles

2 tablespoons chili oil

1 tablespoon soy sauce

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon ginger, grated

2 green onions, chopped (white and green parts separated)

1 tablespoon sesame seeds, toasted

A pinch of salt

Optional: sliced cooked chicken or tofu for protein

Optional: cilantro leaves for garnish

Cook the Udon Noodles: Bring a pot of water to a boil. Add the fresh udon noodles and cook according to package instructions (usually around 2-3 minutes). Once cooked, drain and rinse under cold water to stop cooking and set aside.

    Prepare the Sauce: In a large mixing bowl, combine the chili oil, soy sauce, sesame oil, minced garlic, grated ginger, and a pinch of salt. Mix well until combined.

      Combine Noodles and Sauce: Add the cooked udon noodles to the bowl with the sauce. Toss gently to coat the noodles evenly with all the flavors.

        Add Green Onions: Stir in the chopped white parts of the green onions, reserving the green tops for garnish. If you're adding protein like chicken or tofu, mix it in now.

          Add Sesame Seeds: Sprinkle the toasted sesame seeds over the noodles and give it another light toss.

            Serve: Divide the noodles into serving bowls. Garnish with the reserved green onion tops and cilantro if using.
