8 oz spaghetti or linguine

2 cups fresh spinach, washed and chopped

1 lemon (zested and juiced)

3 cloves garlic, minced

1/4 cup olive oil

1/4 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

Red pepper flakes (optional, for a kick)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
