Ingredients

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup whole milk

1 large egg

1 teaspoon vanilla extract

1/2 cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Oil for frying

Instructions

Prepare the Apples: In a medium bowl, combine the diced apples with a sprinkle of cinnamon and set aside. This helps to enhance their flavor while cooking.

Make the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the diced apples until they are evenly coated with the batter.

Heat the Oil: In a deep fryer or large pot, heat about 2 inches of oil to 350°F (175°C). Carefully monitor the temperature to ensure even cooking.

Fry the Bites: Use a small cookie scoop or tablespoon to drop spoonfuls of batter into the hot oil, frying only a few at a time to avoid overcrowding. Fry until they are golden brown on all sides, approximately 2-3 minutes. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar and 1 tablespoon of milk until smooth. If the glaze is too thick, add another tablespoon of milk until you reach your desired consistency.

Coat the Bites: While the fritter bites are still warm, drizzle the glaze over them or dip them directly into the glaze for a more decadent finish.

Serve: Enjoy your crispy apple fritter bites warm, either as a snack or a delightful dessert!
