2 pounds of chicken (bone-in, skinless preferred)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1 teaspoon garlic powder

1 large onion, chopped

2 cloves garlic, minced

1 thumb-sized piece of fresh ginger, grated

2-3 fresh scotch bonnet peppers (adjust to taste)

3 sprigs of fresh thyme

2 cups coconut milk

1 cup chicken broth

2 medium potatoes, diced

Salt and black pepper to taste

2 tablespoons vegetable oil

Juice of 1 lime

Marinate the Chicken: In a large bowl, combine the chicken with lime juice, Jamaican curry powder, allspice, garlic powder, salt, and black pepper. Cover and let marinate for at least 1 hour, ideally overnight in the fridge.

    Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions become translucent and fragrant, about 5 minutes.

      Brown the Chicken: Increase the heat to medium-high and add the marinated chicken pieces to the pot. Brown the chicken on all sides for about 10-15 minutes.

        Add Liquids: Once the chicken is browned, add the coconut milk and chicken broth to the pot. Stir to combine, and then bring the mixture to a simmer.

          Add Vegetables and Spice: Introduce the diced potatoes to the pot, along with the scotch bonnet peppers and fresh thyme. Stir gently and allow the curry to simmer for about 30-40 minutes, or until the chicken is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.

            Adjust Seasoning: Taste and adjust salt and pepper as needed. If you prefer a spicier curry, you can leave the scotch bonnet peppers whole for extra heat, or remove them to lessen the heat.
