1 cup all-purpose flour

2/3 cup boiling water

1/2 teaspoon salt

1 tablespoon vegetable oil

1 cup ground pork (or chicken)

2 green onions, finely chopped

1 tablespoon ginger, minced

1 clove garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

Salt and pepper to taste

For the Soup:

6 cups chicken or vegetable broth

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon chili paste (adjust to taste)

1 cup bok choy, chopped

1/2 cup mushrooms, sliced

2 green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Dumpling Dough:

    - In a mixing bowl, combine the flour and salt. Pour in the boiling water gradually, stirring with a fork until the mixture resembles a shaggy dough. Once cool enough to handle, knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

      Make the Dumpling Filling:

        - In a separate bowl, mix the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, chili paste, and season with salt and pepper. Combine until well mixed.

          Form the Dumplings:

            - Divide the rested dough into 2 portions. Roll out each portion into a thin log and cut it into small pieces (about 1-inch thick). Roll each piece into a circle about 3 inches in diameter. With a teaspoon, place about 1 teaspoon of the filling in the center of each circle.
