200g (7 oz) pasta (your choice: penne, rigatoni, or fusilli)

200g (7 oz) block of feta cheese

1 cup cherry tomatoes, halved

1/4 cup olive oil

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a medium baking dish, combine cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and black pepper. Stir well to coat the tomatoes evenly.

      Add the Feta: Place the block of feta cheese in the center of the tomato mixture. Drizzle a little more olive oil over the feta and season it with additional black pepper.

        Bake: Bake in the preheated oven for 25-30 minutes, or until the tomatoes are bursting and the feta is softened and slightly golden.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions in a large pot of salted boiling water. Drain and reserve about 1/2 cup of pasta cooking water.

            Combine: Once the feta and tomatoes are ready, remove the dish from the oven. Use a fork to mash the feta and mix it with the tomatoes to create a creamy sauce.

              Mix Together: Add the cooked pasta to the baking dish and toss everything together. If needed, add reserved pasta cooking water a little at a time until you reach the desired creaminess.
