6 large eggs

1 cup milk (whole or 2%)

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter (melted)

1 tablespoon sugar (optional, for sweetening)

Powdered sugar (for dusting)

Fresh lemon juice or maple syrup (for serving)

Fresh fruits (like berries or sliced apples, for topping)

Instructions
 

Preheat your oven to 425°F (220°C) and place a 10-inch cast iron skillet or oven-safe baking dish inside while it preheats.

    In a large bowl, whisk together the eggs, milk, flour, salt, vanilla extract, and melted butter until smooth and well combined. If using, add the sugar for a touch of sweetness.

      Once the oven is hot, carefully remove the skillet from the oven using oven mitts. Immediately pour the batter into the hot skillet, allowing it to sizzle slightly.

        Return the skillet to the oven and bake for 20-25 minutes, or until the pancake puffs up and turns golden brown around the edges.

          Remove the pancake from the oven and let it rest for a minute. It will deflate slightly as it cools.

            Dust the top with powdered sugar, and if desired, squeeze fresh lemon juice or drizzle maple syrup over it.
