1 pound boneless, skinless chicken thighs

1 cup cornstarch

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

2 tablespoons sriracha (adjust to taste)

2 teaspoons rice vinegar

1 tablespoon soy sauce

1 tablespoon honey

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumbers

1/2 cup thinly sliced scallions

1/4 cup chopped cilantro

Sesame seeds for garnish

Salt and pepper to taste

Oil for frying

Instructions
 

Prepare the Chicken: Cut chicken thighs into bite-sized pieces. Season with salt and pepper.
