1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cornstarch

1 cup buttermilk

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to spice preference)

2 cups cooked jasmine rice

1 cup steamed broccoli florets

1/2 cup shredded carrots

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: In a bowl, marinate the chicken pieces in buttermilk for at least 30 minutes to tenderize. This can be done in the refrigerator for enhanced flavor.

    Coat the Chicken: In a separate bowl, combine cornstarch, garlic powder, paprika, salt, and black pepper. Remove the chicken from the buttermilk, letting the excess drip off, then toss the chicken in the cornstarch mixture until fully coated.
