1 lb chicken breast, diced

1 cup corn starch

2 cups vegetable oil (for frying)

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup cucumber, julienned

1/4 cup green onions, sliced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon sesame oil

1 teaspoon lime juice

Salt, to taste

Prepare the Bang Bang Sauce: In a medium bowl, mix together the mayonnaise, sweet chili sauce, sriracha, sesame oil, lime juice, and salt until smooth. Set aside.

    Fry the Chicken: In a large bowl, coat the diced chicken breast with corn starch until evenly covered. Heat vegetable oil in a deep skillet or frying pot over medium-high heat. Once hot (around 350°F), carefully add the chicken in batches, frying until golden brown and cooked through, approximately 5-7 minutes per batch. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.

      Assemble the Bowl: In serving bowls, add a scoop of jasmine rice as the base. Top with fried chicken, shredded carrots, cucumber, avocado slices, and green onions.
