Bang Bang Chicken Bowls

This recipe features crispy, breaded chicken, perfectly paired with fluffy jasmine rice and an array of colorful veggies like carrots, bell peppers, and cucumbers. Ingredients
  

1 lb boneless, skinless chicken breasts

Salt and pepper, to taste

1 cup cornstarch

2 large eggs, beaten

2 cups panko breadcrumbs

Vegetable oil, for frying

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup sliced red bell pepper

1 cup sliced cucumbers

1 avocado, sliced

¼ cup green onions, chopped

Sesame seeds, for garnish

Fresh cilantro, for garnish

For the Bang Bang Sauce:

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. Cut them into bite-sized pieces.

    Breading Station: Prepare a breading station with three shallow bowls; place cornstarch in the first bowl, beaten eggs in the second, and panko breadcrumbs in the third.

      Coat the Chicken: Dredge each chicken piece in cornstarch, shaking off any excess, then dip it into the beaten eggs, and finally coat it thoroughly with panko breadcrumbs.

        Fry the Chicken: In a large skillet, heat about ½ inch of vegetable oil over medium heat. Once hot, carefully add the breaded chicken pieces in batches. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on a paper towel-lined plate.

          Make the Bang Bang Sauce: In a bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until well blended.

            Assemble the Bowls: In each serving bowl, start with a bed of jasmine rice. Top with the crispy chicken pieces, followed by shredded carrots, sliced red bell pepper, cucumbers, and avocado.

              Drizzle Sauce: Generously drizzle the Bang Bang sauce over the top.

                Garnish: Finish with chopped green onions, sesame seeds, and fresh cilantro.
