Ingredients

2 slices of sourdough bread (or bread of choice)

1 cup cooked BBQ chicken, shredded or chopped

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese, shredded

2 tablespoons BBQ sauce (plus extra for drizzling)

1 tablespoon butter

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Fresh cilantro or parsley for garnish (optional)

Instructions

Prepare the Chicken: In a bowl, combine the cooked BBQ chicken with BBQ sauce, garlic powder, onion powder, and season with salt and pepper. Mix well to ensure the chicken is evenly coated.

Layer the Cheese: On one slice of sourdough bread, layer half of the cheddar cheese, followed by the BBQ chicken mixture, and then top it with the remaining cheddar and mozzarella cheese. Add the other slice of bread on top.

Butter the Bread: Spread the butter on the outside of both slices of bread for a golden, crispy crust.

Grill the Sandwich: Heat a skillet over medium heat. Place the sandwich in the skillet and grill for about 4-5 minutes on one side, or until golden brown. Carefully flip the sandwich and continue grilling for another 4-5 minutes, pressing down gently with a spatula until the cheese is melted and the bread is crispy.

Serve: Once golden and crispy, remove the sandwich from the skillet. Let it sit for a minute, then slice in half. Drizzle with extra BBQ sauce and sprinkle fresh cilantro or parsley, if using, for a fresh touch.
