BBQ Chicken Quesadilla

2 cups shredded cooked chicken (preferably BBQ-flavored)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup BBQ sauce (more for drizzling if desired)

4 large flour tortillas

1/2 cup diced red onion

1/2 cup corn (canned or frozen, thawed)

1/4 cup chopped fresh cilantro (optional)

Cooking oil (for grilling)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, diced red onion, corn, and half the cilantro. Mix well until everything is coated with BBQ sauce.

    Assemble the Quesadilla: Lay one tortilla flat on a clean surface. On half of the tortilla, layer 1/4 cup cheddar cheese followed by 1/4 cup Monterey Jack cheese. Spoon some of the BBQ chicken mixture over the cheese, then top with an additional sprinkle of each cheese. Fold the tortilla over to enclose the filling.

      Cook the Quesadilla: Heat a skillet over medium heat and add a little cooking oil. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes until the bottom is golden brown and crispy. Flip the quesadilla and cook for another 3-4 minutes on the other side, adding more oil if necessary.

        Repeat: Remove the cooked quesadilla from the skillet and keep it warm while you repeat the process with the remaining tortillas and filling.

          Slice and Serve: Once all quesadillas are cooked, slice them into wedges. Drizzle with extra BBQ sauce, sprinkle with remaining cilantro, and serve with sour cream and salsa on the side.
