Ingredients
  

12 ounces bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    In a large mixing bowl, combine cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, and parsley.

      In a separate small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.

        Pour the dressing over the pasta salad and gently toss to combine, making sure everything is well coated.

          Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
