Buffalo Chickpea Taquitos

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon salt

½ cup buffalo sauce (adjust for spice preference)

8 small corn or flour tortillas

½ cup shredded cheese (cheddar, mozzarella, or vegan cheese)

½ cup fresh cilantro or parsley, chopped (for garnish)

Avocado or sour cream (for serving)

Instructions
 

Prepare the Chickpeas: In a medium mixing bowl, mash the chickpeas with a fork or potato masher until partially smooth, leaving some chunks for texture.

    Season the Mixture: Add olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and buffalo sauce to the mashed chickpeas. Mix well until all ingredients are combined.

      Warm the Tortillas: In a dry skillet over medium heat, warm each tortilla for about 15-20 seconds on each side until pliable. This will prevent them from cracking.

        Assemble the Taquitos: Take a tortilla and add a couple of tablespoons of the buffalo chickpea mixture along the edge. Sprinkle a bit of shredded cheese on top, then roll the tortilla tightly from the edge with the filling towards the center.

          Cook the Taquitos: Heat a non-stick skillet over medium heat. Place the rolled taquitos seam-side down in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy. You may need to work in batches.

            Serve: Once cooked, remove from the skillet and let them cool slightly. Garnish with fresh cilantro or parsley. Serve with avocado or sour cream on the side for dipping.
