1 pound sirloin steak, cut into bite-sized cubes

3 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

For the Garlic Herb Potatoes:

1 pound baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh parsley, chopped (for garnish)

Prepare the Potatoes:

    Preheat your oven to 425°F (220°C). In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, dried oregano, salt, and pepper. Toss until the potatoes are well-coated.

      Roast the Potatoes:
