Carrot Apple Salad

Ingredients
  

2 large carrots, peeled and grated

1 large crisp apple (such as Granny Smith or Honeycrisp), cored and grated

1/4 cup raisins or craisins

1/4 cup walnuts, chopped

1/4 cup plain Greek yogurt

1 tablespoon honey or maple syrup

Juice of 1 lemon

1 teaspoon ground cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the grated carrots and grated apple.

    Add the raisins or craisins and chopped walnuts to the mixture.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, ground cinnamon, salt, and pepper until smooth.

        Pour the yogurt dressing over the carrot and apple mixture, gently tossing until everything is evenly coated.

          Taste and adjust sweetness or seasoning as desired, adding more lemon juice or honey if needed.

            Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

              Just before serving, give the salad another good toss and garnish with fresh mint leaves for a pop of color and freshness.
