4 large russet potatoes, peeled and diced

8 slices of bacon, chopped

1 medium onion, diced

1 red bell pepper, diced

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or green onions, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.

    In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon, leaving the drippings in the pan.

      Add the diced onions and bell peppers to the skillet, and sauté in the bacon drippings until soft, about 5 minutes.

        In a large bowl, combine the diced potatoes, cooked bacon, sautéed onions and bell peppers, cheddar cheese, and half of the mozzarella cheese. Mix well to combine.

          In a separate bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and pepper. Pour this mixture over the potato and bacon mixture, stirring to ensure everything is evenly coated.

            Transfer the entire mixture into the prepared baking dish. Spread it out evenly and sprinkle the remaining mozzarella cheese on top.

              Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the potatoes are tender. If the cheese starts to over-brown, you can cover it lightly with foil for the last 10 minutes of baking.

                Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped chives or green onions before serving.
