Cheesy Beef Burritos with Crispy Fries

For the Burritos:

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup cooked rice (white or brown)

4 large flour tortillas

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (optional)

For the Crispy Fries:

4 large russet potatoes, cut into fries

3 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

Optional: grated Parmesan cheese for topping

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps make them crispy.

        - Drain the fries and pat them dry with a towel. Place them in a large bowl, add olive oil, garlic powder, paprika, salt, and pepper. Toss until evenly coated.

          - Spread the fries in a single layer on a parchment-lined baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy. For extra flavor, sprinkle grated Parmesan cheese over them during the last 5 minutes of baking.

            Prepare the Beef Filling:

              - In a large skillet over medium heat, add the diced onion and cook until translucent (about 3-4 minutes). Add minced garlic and sauté for another minute.

                - Add the ground beef to the skillet. Cook until browned, breaking it up as it cooks (about 5-7 minutes). Drain excess fat if necessary.

                  - Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.

                    - Remove from heat and stir in the cooked rice and cheddar cheese. Mix well until the cheese is melted and everything is combined.

                      Assemble the Burritos:

                        - Warm the flour tortillas in a skillet or microwave until pliable.

                          - Place a generous scoop of the beef and cheese mixture in the center of each tortilla. Add a dollop of sour cream and some chopped cilantro, if using.

                            - Fold the sides in and then roll the tortilla up from the bottom to form a burrito. Repeat for the remaining tortillas.

                              Serve:
