Cheesy Masala Beans on Toast

Ingredients
  

1 can (400g) of mixed beans (such as kidney beans, black beans, and chickpeas), drained and rinsed

1 medium onion, finely chopped

2 cloves of garlic, minced

1 green chili, finely chopped (optional, for extra heat)

1 tsp cumin seeds

1 tsp garam masala

½ tsp turmeric powder

½ tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella work well)

4 slices of whole grain or sourdough bread

2 tbsp olive oil

Fresh coriander leaves, chopped for garnish

Lemon wedges, to serve

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds. Then, add the chopped onion and sauté until softened and translucent, about 5 minutes.

    Add Garlic and Chili: Stir in the minced garlic and green chili (if using), cooking for an additional 1-2 minutes until fragrant.

      Spice it Up: Sprinkle in the garam masala, turmeric powder, and smoked paprika. Stir well to coat the onions and garlic with the spices.

        Incorporate Beans: Add the drained mixed beans to the skillet. Gently stir to combine and cook for about 5 minutes, allowing the beans to warm through. Season with salt and pepper to taste.
