Chicken Avocado Melt Sandwich

Ingredients
  

2 slices of whole grain bread

1 cup cooked chicken breast, shredded or diced

1 ripe avocado, mashed

1/4 cup cream cheese, softened

1/2 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper to taste

1/2 cup shredded mozzarella cheese

2 tablespoons fresh cilantro, chopped (optional)

Butter for grilling

Instructions
 

Prepare the Spread: In a medium mixing bowl, combine the mashed avocado, cream cheese, garlic powder, paprika, salt, and pepper. Mix until well combined and creamy.

    Mix the Chicken: In another bowl, combine the shredded chicken with the cilantro (if using). Fold in half of the avocado spread until the chicken is well coated.

      Assemble the Sandwich: Spread the remaining avocado mixture evenly on one side of each slice of bread. On the other slice, layer the chicken mixture and sprinkle the mozzarella cheese over the top.
