Chicken Avocado Melt Sandwich

Ingredients
  

2 slices of whole grain bread

1 cup cooked chicken breast, shredded

1 ripe avocado, mashed

1/2 cup shredded mozzarella cheese

1/4 cup Greek yogurt (or mayonnaise)

1 tbsp fresh lime juice

1/4 tsp garlic powder

Salt and pepper to taste

2 tbsp fresh cilantro or parsley, chopped (optional)

1 tbsp olive oil or butter for grilling

Instructions
 

In a mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper. Mix until well combined. If desired, fold in chopped cilantro or parsley for added freshness.

    Preheat a non-stick skillet or griddle over medium heat.

      On one slice of bread, spread a generous amount of the chicken avocado mixture, then top with shredded mozzarella. Place the second slice of bread on top.

        Brush the outer sides of the sandwich with olive oil or butter.

          Place the sandwich in the preheated skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

            Remove from the skillet and let cool for a minute before slicing in half. Serve warm and enjoy!
