Ingredients

2 cups cooked chicken, shredded or cubed

3 cups fresh broccoli florets (or frozen, thawed)

1 cup cooked rice (white or brown)

1 cup cream of chicken soup (or homemade)

1/2 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (for breadcrumbs, if using)

Instructions

Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the shredded chicken, cooked rice, broccoli florets, cream of chicken soup, sour cream, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are well blended.

Transfer the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

If you are using breadcrumbs, mix them with olive oil in a small bowl until they are moistened. Then, sprinkle the breadcrumbs evenly over the casserole mixture. For a cheesier topping, add an additional layer of shredded cheddar cheese on top of the breadcrumbs.

Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.

Remove from the oven and let it cool for 5-10 minutes before serving.
