1 pound elbow macaroni

1 pound ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 tablespoons tomato paste

2 cups beef or vegetable broth

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In the same pot, over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

      Sauté Aromatics: Add the diced onion and minced garlic to the pot with the meat. Sauté for about 3-4 minutes until the onion becomes translucent.

        Add Beans and Tomatoes: Stir in the kidney beans, black beans, diced tomatoes (with juices), and tomato paste. Mix well.

          Season: Add the beef or vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer.

            Combine with Pasta: Once simmering, add the cooked macaroni to the pot. Stir thoroughly to combine all ingredients and allow to heat through for about 5 minutes.

              Cheese It Up: Sprinkle the shredded cheddar cheese over the top of the chili mac. Cover the pot with a lid and let it sit for a few minutes until the cheese melts.
