For the Chicken:

4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

Salt and black pepper to taste

For the Chimichurri Sauce:

1 cup fresh parsley, chopped

1/2 cup fresh cilantro, chopped

1/4 cup red wine vinegar

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice preference)

1/2 cup extra-virgin olive oil

Salt and black pepper to taste

Zest of 1 lemon

Prepare the Chimichurri Sauce:

    - In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, red pepper flakes, lemon zest, salt, and black pepper.

      - Gradually whisk in the olive oil until well combined. Adjust seasoning as needed. Set aside to let the flavors meld.

        Marinate the Chicken:

          - Pat the chicken thighs dry with paper towels. Rub them with olive oil, then season generously with salt and black pepper.

            - Place the chicken in a zip-top bag or a shallow dish. Pour half of the chimichurri sauce over the chicken, reserving the other half for serving. Marinate in the refrigerator for at least 30 minutes, ideally 2 hours.

              Cook the Chicken:

                - Preheat your grill or oven to 400°F (200°C).

                  - If grilling, place the chicken thighs skin-side down on the grill. Cook for about 5-7 minutes until the skin is crispy and marks appear. Flip the chicken and grill for another 7-10 minutes or until the internal temperature reaches 165°F (75°C).

                    - If baking, place the chicken thighs on a baking sheet lined with parchment paper, skin-side up. Bake for 35-40 minutes or until they reach the same internal temperature.

                      Serve:

                        - Once cooked, let the chicken rest for a few minutes before serving. Serve the chicken with the reserved chimichurri sauce drizzled on top or on the side for dipping. Enjoy with your choice of sides such as rice, grilled vegetables, or a fresh salad!
