Chinese Beef and Broccoli

Ingredients
  

1 lb flank steak, sliced thinly against the grain

3 cups broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

2 tablespoons oyster sauce

2 tablespoons cornstarch

1 tablespoon rice vinegar

1 teaspoon sugar

1/2 cup beef broth (or water)

Salt and pepper to taste

Cooked rice or noodles for serving

Instructions
 

In a medium bowl, combine sliced flank steak with cornstarch, 1 tablespoon soy sauce, and a pinch of salt and pepper. Toss to coat and let marinate for about 15 minutes.

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and cook for about 2-3 minutes on each side until browned. Remove beef and set aside.

      In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

        Add broccoli florets to the skillet and stir-fry for about 3-4 minutes until bright green and slightly tender.

          In a small bowl, mix together the remaining soy sauce, oyster sauce, rice vinegar, sugar, and beef broth. Pour this sauce over the broccoli and stir well.

            Return the beef to the skillet, tossing everything together to coat in the sauce. Cook for an additional 2-3 minutes until the sauce thickens slightly and the beef is heated through.

              Serve hot over cooked rice or noodles.
