Chinese Beef and Broccoli

1 lb (450g) flank steak, thinly sliced against the grain

3 cups broccoli florets

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, minced

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar

Optional: Cooked white rice or noodles for serving

Marinate the Beef: In a bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon of water. Mix well and let it marinate for at least 20 minutes while you prepare the other ingredients.

    Blanch the Broccoli: In a pot of boiling water, add the broccoli florets and cook for about 1-2 minutes until vibrant green and tender-crisp. Immediately transfer them to a bowl of ice water to halt the cooking process. Drain and set aside.

      Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, rice vinegar, sesame oil, and sugar. Set aside.

        Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer, cooking for about 2-3 minutes without stirring. This helps achieve a good sear. Stir-fry until fully cooked, about another 2 minutes. Remove the beef from the wok and set aside.

          Sauté Aromatics and Add Broccoli: In the same wok, add the remaining tablespoon of vegetable oil. Stir in the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the blanched broccoli and cooked beef back into the wok.

            Combine with Sauce: Pour the prepared sauce over the beef and broccoli. Stir well to ensure everything is evenly coated with the sauce. Cook for an additional 1-2 minutes until the sauce thickens slightly and everything is heated through.

              Serve: Remove from heat and serve hot over cooked white rice or noodles if desired.
