Cinnamon Sugar French Toast Muffins

6 cups of day-old bread, cut into small cubes (white or brioche work well)

4 large eggs

1 cup milk (whole or almond)

½ cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg (optional)

1 cup maple syrup (for drizzling)

½ cup unsalted butter, melted

Extra cinnamon sugar for dusting (1/4 cup granulated sugar + 2 teaspoons ground cinnamon)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    Prepare the Bread Cubes: Place the day-old bread cubes into a large mixing bowl. If the bread is not stale, you can spread it out on a baking sheet and toast it in the oven for about 10 minutes to dry it out slightly.

      Make the Custard Mixture: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.

        Combine: Pour the custard mixture over the bread cubes and gently stir until all the bread is evenly coated. Allow it to sit for about 10 minutes, so the bread absorbs the liquid.

          Fill Muffin Tin: Using a large spoon, fill each muffin cup with the bread mixture, pressing it down gently to pack it in. Leave a little space at the top as they will puff up during baking.

            Add Butter: Drizzle the melted butter over the tops of the filled muffin cups.
