2 cups jasmine rice

1 can (13.5 oz) coconut milk

1 cup chicken broth

500g boneless, skinless chicken thighs, cubed

2 tablespoons coconut oil

1 tablespoon soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon turmeric powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: sliced cucumbers, avocado, or chopped peanuts

Instructions
 

Prepare the Rice: In a medium saucepan, combine the jasmine rice, coconut milk, and chicken broth. Bring to a boil over medium-high heat, then reduce to low. Cover and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Cook the Chicken: In a large skillet, heat the coconut oil over medium heat. Add the cubed chicken thighs and season with salt, pepper, and turmeric powder. Cook for about 6-8 minutes until the chicken is golden and cooked through.
