Ingredients

1 lb chicken breast, cubed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 cups corn (fresh, frozen, or canned)

1/2 cup mayonnaise

1/2 cup sour cream

1 tablespoon lime juice

1 cup crumbled queso fresco or feta cheese

1/4 cup chopped fresh cilantro

8 small corn or flour tortillas

1 avocado, sliced for topping

Lime wedges for serving

Instructions

Marinate the Chicken: In a bowl, combine the cubed chicken with olive oil, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes.

Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Cook for about 6-8 minutes or until the chicken is cooked through and slightly browned. Remove from heat and set aside.

Prepare the Corn Mixture: In the same skillet, add the corn and cook for another 3-4 minutes until heated through and slightly charred. Transfer to a mixing bowl.

Make the Sauce: In a separate bowl, mix the mayonnaise, sour cream, lime juice, crumbled queso fresco, and cilantro. Stir until well combined, then fold in the cooked corn.

Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. Layer the cooked chicken on each tortilla, followed by a generous scoop of the corn mixture. Top with avocado slices.

Serve: Serve with lime wedges on the side for an extra burst of flavor. Enjoy the vibrant flavors and textures of your Crazy Good Street Corn Chicken Tacos!
