Creamy Broccoli and Chicken Penne

12 oz penne pasta

2 cups broccoli florets

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets. Drain the pasta and broccoli and set aside.

    Cook the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the chicken pieces. Season with salt, pepper, and Italian seasoning. Cook for about 6-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 1 tablespoon of olive oil and reduce the heat to medium. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned. Pour in the chicken broth, stirring to deglaze the pan, and cook for about 2-3 minutes.

        Make it Creamy: Lower the heat and stir in the heavy cream, mixing well. Gradually add the Parmesan cheese, stirring continuously until melted and the sauce is creamy. Add more salt, pepper, and red pepper flakes (if using) to taste.

          Combine Ingredients: Add the cooked chicken, pasta, and broccoli to the skillet. Toss everything together until well coated in the creamy sauce. Let it cook for an additional 2-3 minutes to heat through.
