Creamy Cajun Chicken Pasta

This easy recipe combines tender chicken, fettuccine, and a rich, flavorful sauce made with Cajun seasoning, heavy cream, and Parmesan cheese. 8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp Cajun seasoning

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Optional: red pepper flakes for extra heat

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning until well-coated.

      Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Cook for 3-4 minutes until softened. Add the minced garlic and sauté for an additional 1 minute, until fragrant.

          Make the Sauce: Lower the heat to medium. Pour in the chicken broth and bring to a simmer. Add the heavy cream and Parmesan cheese, stirring until the cheese has melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until you reach desired consistency.

            Combine: Return the cooked chicken to the skillet, then add the cooked fettuccine. Toss everything together to coat the pasta and chicken in the creamy sauce. Season with salt, pepper, and additional red pepper flakes if desired.

              Serve: Plate the creamy Cajun chicken pasta. Garnish with chopped fresh parsley and additional Parmesan cheese, if desired. Serve hot and enjoy!
