Creamy Chicken Sausage Orzo Skillet

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound chicken sausage (Italian or your choice), sliced

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup fresh spinach

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

    Cook sausage: Add the sliced chicken sausage to the skillet. Cook until browned and heated through, about 5-7 minutes.

      Add orzo: Stir in the orzo pasta, ensuring it’s coated with the oil and flavors. Cook for another minute.

        Pour in broth: Gradually add the chicken broth while continuously stirring. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for approximately 10-12 minutes or until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.

          Make it creamy: Once the orzo is cooked, lower the heat and stir in the heavy cream, followed by the fresh spinach and cherry tomatoes. Season with Italian seasoning, salt, and pepper. Stir until the spinach wilts and the mixture is well combined.
