1 lb (450g) rotini pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups fresh baby spinach

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

    Cook the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken pieces, seasoning with salt and pepper. Cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Make the Sauce: Pour in the heavy cream and stir to combine. Slowly add the grated Parmesan cheese, stirring constantly until melted and smooth. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Stir in the Italian seasoning.

          Combine Ingredients: Return the cooked chicken and spinach to the skillet, tossing to combine with the sauce. Add the cooked rotini and mix thoroughly, ensuring that the pasta is coated in the creamy sauce.

            Adjust Seasoning: Taste the dish and adjust with additional salt and pepper if needed. Let it simmer for an additional 2-3 minutes to heat everything through.
