1 lb (450g) boneless, skinless chicken thighs

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tbsp honey

1 tbsp fresh lime juice

Chopped green onions and sesame seeds for garnish

Instructions
 

Prep the Chicken: Cut the chicken thighs into bite-sized pieces. In a bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

    Breading Station: Set up three bowls: one with the seasoned flour, one with beaten eggs, and the last with panko breadcrumbs.

      Coat the Chicken: Dredge each piece of chicken in the flour mixture, shaking off excess. Dip into the egg, then roll in the panko breadcrumbs until fully coated. Set aside on a baking sheet.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Once hot (about 350°F or 175°C), carefully add the chicken pieces in batches. Fry until golden brown and crispy, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust the amount of sriracha based on your preferred spice level.

            Toss in Sauce: Once all the chicken is cooked and crispy, place it in a large bowl and pour the bang bang sauce over the chicken. Gently toss to coat evenly.

              Serve: Garnish with chopped green onions and sesame seeds. Serve immediately with extra sauce on the side for dipping.
