Crispy Bang Bang Salmon Bites (Sweet & Spicy)

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Oil for frying

Bang Bang Sauce:

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp Sriracha (adjust for spice preference)

1 tsp honey

1 tsp lime juice

Chopped green onions and sesame seeds for garnish

Prepare the Salmon: Start by cutting the salmon fillet into bite-sized cubes. Pat them dry with a paper towel to ensure a crispy coating.

    Set Up Breading Station: In three separate bowls, place the flour seasoned with salt, pepper, garlic powder, onion powder, and paprika; the beaten eggs; and the panko breadcrumbs.

      Bread the Salmon: Dredge each salmon piece in the seasoned flour, shaking off the excess. Dip it into the beaten eggs, letting any excess drip off. Finally, coat it in the panko breadcrumbs until well-covered. Repeat for all salmon cubes.

        Fry the Salmon: In a large, deep skillet, heat enough oil to cover the bottom of the pan (about 1/4 inch) over medium heat. Once hot, carefully place the breaded salmon bites into the oil in a single layer, avoiding overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side. Transfer cooked bites to a paper towel-lined plate to drain any excess oil.

          Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Mix well until smooth and creamy.

            Serve: Arrange the crispy salmon bites on a serving platter. Drizzle or serve the Bang Bang sauce on the side. Garnish with chopped green onions and a sprinkle of sesame seeds for an extra touch.
