Crispy Chilli Beef (with Sweet Chilli) - Chinese Shredded Beef

500g beef sirloin, thinly sliced against the grain

1 cup cornstarch

½ cup all-purpose flour

1 tbsp baking powder

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

¾ cup water

Oil for frying (vegetable or peanut oil)

4-5 dried red chilies, chopped

3 spring onions, sliced

2-3 cloves garlic, minced

1 tbsp ginger, minced

¼ cup sweet chilli sauce

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

Fresh coriander for garnish (optional)

Instructions
 

Marinate the Beef: In a mixing bowl, combine sliced beef with soy sauce, garlic, ginger, and rice vinegar. Let it marinate for at least 30 minutes for enhanced flavor.

    Prepare the Coating: In a separate bowl, mix cornstarch, all-purpose flour, baking powder, salt, black pepper, and garlic powder. Gradually add water, whisking until you create a smooth batter.

      Heat the Oil: In a large deep skillet or wok, heat oil over medium-high heat until it reaches 180°C (350°F). Test the heat by dropping a small amount of batter; it should sizzle and rise quickly to the surface.

        Coat the Beef: Remove the marinated beef from the marinade, allowing excess to drip off. Dip each piece into the batter, ensuring it is evenly coated.

          Fry the Beef: Carefully add coated beef to the hot oil in small batches. Fry for 2-3 minutes or until the beef is golden and crispy. Don't overcrowd the pan. Remove and drain on paper towels.

            Create the Chilli Mix: In a separate pan, heat a little oil over medium heat. Add dried red chilies and fry until they are fragrant (30 seconds). Add the minced garlic and spring onions, stirring for another minute.

              Combine: Add the freshly fried beef to the pan with the garlic and chili mixture. Pour in the sweet chili sauce and sesame oil, stir-frying everything together for 1-2 minutes, ensuring the beef is well coated.

                Serve: Plate the crispy chilli beef, garnishing with fresh coriander if desired. Serve hot with steamed rice or noodles.
