Ingredients

1 lb (450g) chicken breast, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

2 large eggs, beaten

Oil, for frying (vegetable or peanut oil)

1/3 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp rice vinegar

1 tsp sesame oil

Sliced green onions, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Chicken: In a mixing bowl, combine the flour, cornstarch, baking powder, salt, pepper, and garlic powder. Mix well. Dip the chicken pieces into the beaten eggs, and then coat them in the flour mixture until fully covered. Shake off any excess flour.

Heat the Oil: In a large skillet or wok, heat about 1-2 inches of oil over medium heat. To test if the oil is ready, drop a small piece of batter into the oil; it should sizzle and rise to the top.

Fry the Chicken: Once the oil is hot, carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Make sure not to overcrowd the pan. Remove the fried chicken and place it on a paper towel-lined plate to drain excess oil.

Make the Sauce: In a separate small saucepan, combine the honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Cook over medium heat until the mixture begins to bubble and thicken, stirring occasionally (about 3-4 minutes).

Coat the Chicken: Once the sauce has thickened, lower the heat and add the crispy chicken to the saucepan. Toss well to ensure every piece is coated in the honey garlic sauce.

Serve: Transfer the honey garlic chicken to a serving plate. Garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or alongside stir-fried vegetables.
