Ingredients

4 boneless, skinless chicken breasts

1 cup crumbled feta cheese

1/4 cup hot honey (store-bought or homemade)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). While it heats, prepare your chicken.

Prepare Chicken: Place chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to an even thickness (about 1/2 inch).

Set Up Breading Station: In three separate shallow bowls, prepare your breading station.

        - In the first bowl, place the all-purpose flour seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper.

          - In the second bowl, beat the eggs until smooth.

            - In the third bowl, place the panko breadcrumbs.

              Coat the Chicken:

                - Dredge each chicken breast first in the seasoned flour, shaking off any excess.

                  - Dip into the beaten eggs, allowing excess to drip off.

                    - Finally, coat generously with panko breadcrumbs. Press the breadcrumbs onto the chicken to help them stick.

                      Fry the Chicken:

                        - Heat the olive oil in a large, oven-safe skillet over medium heat. Once shimmering, add the coated chicken breasts.

                          - Cook for 4-5 minutes on each side until golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan.

                            Bake the Chicken:

                              - Once all the chicken is fried, place the skillet in the preheated oven and bake for 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

                                Add Feta and Hot Honey:

                                  - Remove the skillet from the oven. Sprinkle the crumbled feta cheese evenly over the chicken, then drizzle generously with hot honey.

Final Broil (Optional): For extra crispiness, place the skillet under the broiler for 2-3 minutes, watching closely, until the cheese is bubbly and golden.

                                      Garnish and Serve:

                                        - Remove from the oven, garnish with chopped fresh parsley, and serve immediately. Enjoy your Crispy Hot Honey Feta Chicken!
