Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon paprika (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the chopped spinach, cream cheese, feta cheese, Parmesan cheese, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined.

Using a sharp knife, carefully cut a pocket in each chicken breast, ensuring not to cut all the way through.

Stuff each chicken breast with the cheese and spinach mixture. Use toothpicks to secure the openings if needed.

In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the stuffed chicken breasts. Sear for about 4-5 minutes on each side until golden brown.

Once browned, sprinkle the tops with paprika for added color and flavor, then transfer the skillet to the preheated oven.

Bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.

Remove from the oven, let rest for 5 minutes, then carefully remove the toothpicks.

Slice and serve hot, garnished with additional fresh herbs if desired.
