For the Pastry:

2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon turmeric powder

1/2 cup unsalted butter, chilled and diced

1/4 cup cold water

For the Beef Filling:

1 lb ground beef (preferably lean)

1 small onion, finely chopped

2 cloves garlic, minced

1 small bell pepper, finely chopped

1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

1/2 teaspoon allspice

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon soy sauce

1 tablespoon vegetable oil

Salt to taste

For Assembly:

1 egg (beaten, for egg wash)

Make the Pastry: In a bowl, mix the flour, salt, and turmeric. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until a dough forms. Knead gently for about a minute, cover with plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the Filling: In a large skillet, heat vegetable oil over medium heat. Sauté the onions and garlic until translucent. Add the ground beef, breaking it up with a spoon, and cook until browned. Stir in the bell pepper, thyme, allspice, paprika, cayenne, and black pepper. Add soy sauce and season with salt. Cook for an additional 5 minutes, then remove from heat and let cool.

      Assemble the Patties: Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled pastry to about 1/8 inch thick. Cut out circles using a large cookie cutter (about 5-6 inches in diameter). Place a tablespoon of beef filling in the center of each circle.

        Seal the Patties: Brush the edges of the pastry circle with beaten egg, fold over to create a half-moon shape, and press edges firmly with a fork to seal. Place the patties on a baking sheet lined with parchment paper.

          Bake: Brush the tops of the patties with the remaining beaten egg. Bake in the preheated oven for 25-30 minutes or until golden brown.

            Serve: Allow to cool slightly before serving. Enjoy your Jamaican beef patties hot, ideally with some Jamaican hot sauce or a side of mango chutney!
