Ingredients
  

4 medium cucumbers, thinly sliced

1 tablespoon salt

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon minced garlic

1 teaspoon grated ginger

2 green onions, thinly sliced

1 tablespoon sesame seeds (toasted)

Fresh cilantro leaves for garnish (optional)

Instructions
 

In a large bowl, combine the thinly sliced cucumbers and salt. Toss well to ensure the cucumbers are evenly coated. Let sit for 15 minutes to allow moisture to release.

    After 15 minutes, drain excess liquid from the cucumbers using a colander. Rinse briefly under cold water and pat dry with paper towels to remove excess salt.

      In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar dissolves.

        In a mixing bowl, add the drained cucumbers, green onions, and the dressing you just prepared. Toss together until the cucumbers are well coated with the dressing.

          Sprinkle the toasted sesame seeds over the salad and give it a final gentle toss.

            Garnish with fresh cilantro leaves if desired and serve immediately or refrigerate for about 30 minutes to let the flavors meld before serving.
