2 large cucumbers, thinly sliced

1/4 cup rice vinegar

1 tablespoon soy sauce

1 teaspoon sesame oil

1 tablespoon sugar or honey

1 teaspoon grated fresh ginger

1 garlic clove, minced

1 tablespoon sesame seeds

1/4 teaspoon red pepper flakes (optional)

Fresh cilantro or green onions for garnish

Prepare the Cucumbers: In a mixing bowl, place the thinly sliced cucumbers. If desired, sprinkle them with a little salt and let them sit for about 10 minutes. This draws out excess water and enhances the crunch.

    Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), grated ginger, minced garlic, and red pepper flakes (if using) until the sugar is dissolved and all ingredients are well combined.

      Combine: After the cucumbers have drained, rinse them with cold water and pat them dry with a paper towel. Add the cucumbers to the bowl with the dressing and toss gently to coat all slices evenly.
