2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and black pepper, to taste

1/2 cup chipotle ranch dressing

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup chopped lettuce

1 medium tomato, diced

4 large flour tortillas

Optional: sliced jalapeños and cilantro for garnish

Marinate the Chicken: In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Coat the chicken breasts thoroughly with the marinade. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F/74°C). Remove from the grill and let rest for a few minutes before slicing.

      Prepare Filling: In a large bowl, combine cooked rice, black beans, corn, half of the shredded cheese, and diced tomatoes. Mix gently to combine.

        Assemble the Burritos: Warm the flour tortillas slightly to make them pliable. On each tortilla, start with a generous scoop of the rice and bean mixture, then add sliced grilled chicken, a drizzle of chipotle ranch dressing, a sprinkle of lettuce, and the remaining cheese.
