Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

This recipe combines soy sauce, fish sauce, garlic, and spices for mouthwatering skewers, perfect for summer barbecues or easy weeknight meals. For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon vegetable oil

Bamboo or metal skewers (if using bamboo, soak in water for at least 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey

1 teaspoon red curry paste (optional for heat)

1-2 tablespoons water (to thin, if necessary)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground coriander, red pepper flakes, and vegetable oil. Mix well. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, but ideally up to 2 hours.

      Prepare Peanut Sauce:

        In a small saucepan over low heat, whisk together the peanut butter and coconut milk until smooth. Stir in the soy sauce, lime juice, honey, and red curry paste (if using). If the sauce is too thick, add water a little at a time until desired consistency is achieved. Let it simmer gently for a few minutes, then remove from heat and set aside.

          Skewer the Chicken:

            Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers. Make sure not to crowd them too much, allowing for even cooking.

              Grill the Skewers:

                Place the chicken skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The chicken should reach an internal temperature of 165°F (75°C).

                  Serve:

                    Drizzle the peanut sauce over the grilled chicken skewers and garnish with chopped peanuts and cilantro. Serve with lime wedges on the side for an extra burst of flavor!
