Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of boiling salted water, cook the pasta shells according to the package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Using a spoon, fill each pasta shell with the spinach and ricotta mixture, ensuring they are generously filled.

          Layer the Marinara Sauce: In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom. Carefully place the stuffed shells on top of the sauce.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure to cover them completely. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Let the dish cool for a few minutes before serving. Garnish with fresh basil if desired.
