Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 jumbo pasta shells

1 cup ricotta cheese

2 cups fresh spinach (chopped)

1 cup shredded mozzarella cheese (divided)

1/4 cup grated Parmesan cheese

1 large egg (lightly beaten)

2 cloves garlic (minced)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese (1/2 cup), grated Parmesan, beaten egg, minced garlic, Italian seasoning, and a pinch of salt and pepper. Mix well until all ingredients are incorporated.

        Stuff the Shells: Take each cooked shell and fill it with about 2 tablespoons of the ricotta and spinach filling. Place the stuffed shells seam-side up in a 9x13 inch baking dish.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the mozzarella is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired, and serve hot.
