Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

3 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Shells: Bring a large pot of salted water to a boil. Add the jumbo shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until thoroughly combined.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Stuff the Shells: Take a tablespoon of the spinach and ricotta filling and carefully stuff each cooked shell. Place the stuffed shells upright in a 9x13 inch baking dish.

          Add Sauce: Once all the shells are stuffed, pour the marinara sauce evenly over them. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired, and serve warm.
