2 boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup sun-dried tomatoes, chopped (packed in oil)

1/2 cup heavy cream

1 cup chicken broth

8 ounces penne pasta

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sun-dried tomatoes and cook for an additional 2 minutes.

        Create the Creamy Sauce: Pour in the chicken broth and bring it to a simmer. Reduce the heat and stir in the heavy cream. Let it simmer for about 3-4 minutes, allowing it to thicken slightly.

          Combine Ingredients: Return the cooked chicken to the skillet along with the fresh spinach. Stir until the spinach wilts, about 2-3 minutes.
