Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sriracha

1 teaspoon sesame oil

2 packs of instant ramen noodles (discard seasoning packets)

4 cups chicken broth

3 cloves garlic, minced

1 teaspoon ginger, grated

1 cup baby spinach

1 carrot, julienned

2 green onions, sliced

½ cup heavy cream

Salt and pepper to taste

Optional toppings: soft-boiled eggs, sesame seeds, or chili flakes

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sriracha, and sesame oil. Add chicken thighs, making sure they're coated well. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes per side until fully cooked and golden brown. Remove from heat, allow to cool slightly, then slice into bite-sized pieces.

      Prepare the Broth: In a large pot, add chicken broth, minced garlic, and grated ginger. Bring to a simmer over medium heat.

        Cook the Noodles: Add the ramen noodles to the simmering broth. Cook according to package instructions, usually about 3-4 minutes. During the last minute of cooking, toss in the julienned carrots and baby spinach. Stir gently to combine.

          Make the Creamy Garlic Sauce: In a separate small pan, heat the heavy cream over low heat. Add any remaining garlic and simmer for about 3 minutes until the garlic is fragrant. Taste and season with salt and pepper. If you'd like a more intense flavor, stir in a little extra sriracha.

            Assemble the Ramen Bowls: Divide the noodles and vegetables among serving bowls. Top with slices of cooked chicken. Drizzle the creamy garlic sauce generously over the top.

              Garnish and Serve: Finish with sliced green onions, and any optional toppings you desire like soft-boiled eggs, sesame seeds, or chili flakes for extra heat.
